Whatcha Got Cooking??

I have really been struggling in the cooking department. It really isn't the cooking that has me all out of sorts but knowing what to cook. I'd like to cook things that are healthy, yummy, and inexpensive but honestly sometimes I'm too tired for that. Recently though I've been hearing a lot about Skinnytaste. Have you all made recipes from this site? I think I'm going to try a few. Any recommendations? Also do you have other websites that offer yummy recipes? I've pinned a few but I need lots more.


A friend and I were talking about how stressful meal planning can be. I have great intentions of getting it all planned, getting all the grocercies bought and being ready to go before the week starts. At this point life gets in the way and I just don't get it done. I'd love to get back to buying groceries only 2 times a month or even once a month would be a dream. If I could ever get it organized....

Do you have a place there where you can assemble meals to freeze? We have one here that's wonderful. I made 12 meals to freeze for around $150. It's great if you have one.

I have tried a few of the Skinny Taste recipes, and have a few observations! I made the cilantro lime rice, which if you make it according to the instructions, it tastes just like Chipotle's rice. I have also made the Asian Flank Steak Skewers, which I think taste great but I would probably use a little less soy sauce than the recipe calls for. Good luck!

Meal planning is one of my least favorite things! Healthy eating + quick + on a budget just do not work. Ugh. I'm going to check out the website you posted and am committing to picking one new recipe to try this week.

I love the idea in a previous comment to try one new recipe a week. That always helps me out of my slumps. I think I'll post about my grocery routine later this week, and I'll send you a link. My routine may seem complicated to some, but it works so well for me and my family. Basically I do "big" shopping at the beginning of the month and then make small trips as needed 2-3 more times throughout the month. I plan our menu, freeze ahead meals, etc. It has worked well for our budget and I'm able to freeze ahead a lot of crock pot meals which are then simple to cook and serve. Look for my post Thursday or Friday :)

I was having this same thought today. We end up eating dinner around 8 right now because I am not prepared. I was pulling together recipes while at work today to try and help these efforts. I will have to check out SkinnyTaste.

I know what you mean, Hillary!! Meal planning van me SO much work. I have found though, for me, NOT meal planning ends up being more work, so I make myself do it. I post my menu every Monday if you're ever looking for some inspiration. ;-) Also, at the bottom of my post, I link up to a menu-making linkup where literally like 300 bloggers post their menus! I have two words: Crock pot. Or is that one word? I've been using mine like a crazy woman lately and it is so amazing. Also I LOVE skinny taste and make a lot of her stuff. I've been meaning to do a weekly menu post on my blog every week and then I never do.
